This type also makes quick work out some tough meats too so if your looking something more than just "all purpose" then these are worth checking too.
The big thing with a Santoku knife by Cuisinart is the size of the blade. They come in 5" and 7" sizes. Keep in mind the size of the user when you pick your blade size, people with smaller hands will find the 5" much easier to handle.
